In summer, herds move up to the flower-filled fields of the high mountains and eat their fill of fragrant grasses. 2. Allgäuer Bergkäse PDO, Bavaria, Germany

Allgäuer Bergkäse PDO is a cheese made from raw cow’s milk in the German part of the Allgäu region. It was awarded the European Protected Designation of Origin in 1997. The essence of this cheese relies on fresh milk sourced from herds that graze on the high pastures of the northern foothills of the Alps. The local areas of Lindau, Oberallgäu, Ostallgäu, and Unterallgäu in the Swabian part of Bavaria, including the towns of Kaufbeuren, Kempten, and Memmingen, offer the unique environment for making this renowned cheese. 6. Pecorino Sardo PDO, Sardinia, Italy

Produced exclusively on the island of Sardinia, Pecorino Sardo is a semi-cooked, hard cheese made with whole milk from the pasture-grazing Sarda sheep. This breed is indigenous to Sardinia and considered among the best domestic breeds for milk production. Highly adaptable to different terrains, Sarda sheep feed on fragrant Mediterranean shrubs, which gives Pecorino its distinctive aromatic flavour.
