    Solid roundup but I’d push back a bit on the framing of angel investors as a realistic option for most restaurant entrepreneurs. In my experience having helped six independent places open in the Boston area, the vast majority will end up cobbling together personal savings, an SBA loan, and family money no matter how good their pitch is. Restaurants just don’t return capital fast enough for traditional angels to bite. Your question about cost control with suppliers is where most of the value actually lives, that’s where margins are won or lost.
