National Day dishes make August 9 in Singapore feel like nothing else on earth, and every table, whether in a Tiong Bahru flat or a Sentosa resort, deserves the full spread.

Why food is the real national anthem

Singapore takes its food seriously all year. But August calls for something more. Food is integral to Singapore’s multicultural and multiracial identity, and Singaporeans of all backgrounds share a common pride in the hawker culture that earned UNESCO Intangible Cultural Heritage status in December 2020. That recognition is not merely symbolic. So when August arrives, the question is not whether to cook. The question is what to cook. These 7 dishes answer that question with confidence.

1. Hainanese chicken rice

No list of National Day dishes starts anywhere else. Every August 9, when Singapore celebrates the day it became a sovereign state in 1965, no National Day spread is complete without Hainanese chicken rice, a dish of boiled chicken, broth-flavoured rice and soup. More than just a national dish, chicken rice reflects how Singapore took something from immigrant forefathers and made it uniquely its own, with tender poached chicken, aromatic rice cooked in broth, and a fiery chilli sauce.

3. Satay

Satay is a festive, communal dish that people order by the dozen, gathering around and sharing sticks while dipping them into thick, nutty gravy. Skewers of chicken, beef, or mutton, marinated in turmeric and lemongrass, then grilled over charcoal. The peanut sauce should be rich and slightly sweet. Thick rice noodles, prawns, cockles, fish cake, and a boiled egg go into the bowl. Add a dollop of sambal belacan on top.

Rojak is Singapore’s most honest dish. It mixes fruit and vegetables with a thick prawn paste sauce, lime, sugar, and crushed peanuts. Pineapple, cucumber, turnip, you tiao, and tofu puffs all go in. Rojak appears alongside satay and bak kut teh at major National Day celebrations. The sauce is pungent, sweet, and sour at once.

Ondeh-ondeh closes the meal. These small glutinous rice balls carry a liquid palm sugar centre and a coating of fresh coconut. Bite into one and the filling bursts.
