National Day dishes make August 9 in Singapore feel like nothing else on earth, and every table, whether in a Tiong Bahru flat or a Sentosa resort, deserves the full spread.

Singapore takes its food seriously all year. But August calls for something more. So when August arrives, the question is not whether to cook. The question is what to cook. These 7 dishes answer that question with confidence.

1. Hainanese chicken rice

No list of National Day dishes starts anywhere else. Every August 9, when Singapore celebrates the day it became a sovereign state in 1965, no National Day spread is complete without Hainanese chicken rice, a dish of boiled chicken, broth-flavoured rice and soup. More than just a national dish, chicken rice reflects how Singapore took something from immigrant forefathers and made it uniquely its own, with tender poached chicken, aromatic rice cooked in broth, and a fiery chilli sauce.

6. Nasi lemak, rojak, and ondeh-ondeh: the supporting trio
