The multicultural influences on laksa, and Nyonya (Peranakan Chinese) cuisine in general, are visible in its history. Chinese immigrants who arrived in the Straits Settlements combined local spices with Chinese cooking methods to produce Nyonya dishes, including laksa. Every bowl carries that long story in a single spoonful.

A bowl of curry laksa shines because of its spicy coconut-based soup. Fishcakes, prawns, and cockles atop thick bee hoon noodles give laksa a strong ocean note. Importantly, the noodles are always cut short before serving, so you no longer need chopsticks to finish the bowl. A spoon handles everything.

1. 328 Katong Laksa, East Coast Road. 328 Katong Laksa along East Coast Road is arguably no other name as synonymous with laksa. They beat Gordon Ramsay at the Singtel Hawker Heroes challenge in 2013. They offer 2 standard bowls: S$7.30 for the small, and S$9.30 for the large. They also serve a shredded chicken laksa and a laksa with flower clam.

2. Famous Sungei Road Trishaw Laksa, Hong Lim Food Centre. Found in the Hong Lim Market and Food Centre, this Michelin Bib Gourmand winner serves a unique laksa. The gravy is made smoother and lighter with evaporated milk and fresh coconut juice. You can even get a special version with crayfish.

3. Sungei Road Laksa, Jalan Berseh. Sungei Road Laksa is housed within a coffee shop that is slightly hard to get to, with no MRT stations nearby. People still come from all over for bowls of laksa, and the queue stays long throughout opening hours. The effort is absolutely worth it.

4. 928 Yishun Laksa, Yishun. Known for having the best laksa in the north of Singapore, 928 Yishun is a must-visit destination for laksa fans in the Yishun area. Be prepared for a long queue because this place is simply very popular. You may also ask the chef to replace cockles with crabsticks.

5. Wei Yi Laksa, Queensway. West-side residents take pride in having the best laksa through Wei Yi. It is one of the few hawker stalls that allow customers to choose their preferred ingredients from various sets. That flexibility makes it a strong option for diners with specific preferences.

6. Terry Katong Laksa, Amoy Street Food Centre. Originally located in the now-defunct Bukit Timah Market and Food Centre, Terry Katong Laksa has temporarily relocated to Amoy Street Food Centre. The move has not dimmed its reputation. The broth remains rich and fragrant.

7. Mama’s Kent Secret Recipe, Tanjong Pagar. The stall is run by Kent Cheong, who picked up his recipes from his mother. Have a go at their Penang Laksa (S$7.50 for small, S$9 for large), which brings the assam laksa of Penang to Singapore. If you prefer a tamarind-based broth over a coconut one, this is the stall to visit.

8. George’s Laksa, Changi Road. George’s Laksa along Changi Road is the definition of a hidden gem. Tucked within a quiet eatery, the stall is operated by George himself and serves his signature Katong Laksa at S$6, S$7, and S$8. The prices are fair, and the bowl is honest.
